WHAT YOU’LL NEED

140 GRAMS CONTAINER LITTLE GEM LETTUCE OR SPRING MIX
½ SMALL RED ONION, VERY THINLY SLICED AND SOAKED IN ICE WATER
225 GRAMS SUMMER SQUASH, VERY THINLY SLICED
1 C UP PISTACHIOS, TOASTED AND SHELLED
⅓ CUP LEMON DRESSING (SEE BELOW)
½ C UP SHAVED PARMIGIANO-REGGIANO EXTRA-VIRGIN OLIVE OIL, FOR DRIZZLING
