What Is Butter?

Butter is a semisolid emulsion made by churning cream until it sets up. By law, butter in the United States must be at least 80 percent milk fat; the rest is water (roughly 16 percent) and milk solids (roughly 4 percent). Cultured butter is made with cream that has been fermented before churning; this butter has a distinctly complex, tangy flavor.
