Holiday Cookies
NO-BAKE COOKIE BUTTER BALLS
Makes about 16
I1 cup confectioners’ sugar
½ cup finely crushed Biscoff cookies
¾ teaspoon kosher salt
⅓ cup Biscoff cookie butter
¼ cup unsalted butter, softened
2½ cups white chocolate melting wafers* and/or chopped 64% cacao semisweet chocolate*
Garnish: crushed Biscoff cookie crumbs
ONE Line a rimmed baking sheet with parchment paper.
TWO In a large bowl, stir together confectioners’ sugar, crushed cookies, and salt. Add cookie butter and butter, stirring until well combined. (Knead together by hand toward the end, if necessary.) Shape dough into 1-tablespoon balls, and place 1 inch apart on prepared pan. Freeze for 15 minutes.
In a medium microwave-safe bowl, microwave chocolate on high in 10-second intervals, stirring between each, until melted and smooth. Using 2 forks, dip and coat balls in melted chocolate, letting excess drip off; return to baking
