MIDDLE EASTERN-STYLE WARM SALAD
SERVES 4 PREP 10 MINS COOK 10 MINS
• 250g packet pearl couscous
• ½ cup instant couscous
• 1 tbsp olive oil
• 2 celery stalks, plus leaves, sliced
• 1 tbsp Moroccan seasoning
• 2 cups cooked cauliflower florets (or other vegies)
• ¼ cup chopped dried apricots
• 2 tbsp currants
• ⅓ cup chopped almonds
• 1 tsp finely grated lemon zest
• ¼ cup coriander leaves
• lemon wedges, to serve
DRESSING
• ½ cup natural yoghurt
• 2 tbsp tahini
• finely grated zest, juice 1 lemon
Cook both couscous following packet instructions. Set aside.
