MIDDLE EASTERN-STYLE WARM SALAD

SERVES 4 PREP 10 MINS COOK 10 MINS

250g packet pearl couscous
½ cup instant couscous
1 tbsp olive oil
2 celery stalks, plus leaves, sliced
1 tbsp Moroccan seasoning
2 cups cooked cauliflower florets (or other vegies)
¼ cup chopped dried apricots
2 tbsp currants
⅓ cup chopped almonds
1 tsp finely grated lemon zest
¼ cup coriander leaves
lemon wedges, to serve

DRESSING

½ cup natural yoghurt
2 tbsp tahini
finely grated zest, juice 1 lemon

Cook both couscous following packet instructions. Set aside.
