A decadent treat complete with Oreo craquelin, baby mandarin caramel and Oreo cream
MAKES 40 Preheat oven to 180°C fan forced. For the Oreo craquelin, place 70g unsalted butter, 50g mini Oreo biscuits, 50g plain flour, 40g caster sugar and ½ tsp salt into a small food processor and pulse to a dough. Turn out onto a piece of baking paper and cover with a second sheet. Roll out to 2mm thickness, then reserve in freezer to firm up until required. For the candied mandarin,
