GORGONZOLA BISCUITS WITH QUINCE PASTE

150g gorgonzola
100g salted butter, chilled, cubed
⅔cup plain flour
1 tsp wholegrain mustard
½tsp coarsely ground black pepper
75g quince paste
1 bulb red or white endive, trimmed and sliced
Finely chop or crumble 50g of the gorgonzola. In a bowl, rub
