Traditional treat
A right Royal raspberry ripple ice cream
• 4 egg yolks
• 150g icing sugar
• 300ml whole milk
• 150ml double cream
• 1 tsp vanilla bean paste
FOR RASPBERRY COULIS:
• 200g fresh raspberries
• 50g caster sugar
• ½ lemon, juice
1. To make the ice cream base, combine the egg yolks, icing sugar, milk, double cream and vanilla in a pan.
2. Cook on a low heat, stirring continuously, then when the mixture coats the back of a spoon, remove it from the heat and allow to cool to room temperature.
