    This is very economical as one jacket potato serves two people. Prep this one ahead of time for a busy weekday supper.

    SERVES 6 PREP 5 MINS COOK 30 MINS

    ✱ ½tbsp sunflower or olive oil
    ✱ 100g smoked bacon, thinly sliced
    ✱ 400g can chopped tomatoes
    ✱ 150g sweetcorn, drained
    ✱ 3 large jacket potatoes, baked
    ✱ 6 medium eggs
    ✱ 50g mature cheese, finely grated✱
