Smoked Prime Rib

TEXAS BRISKET IS arguably the holy grail of barbecue in the United States. But some Lone Star State pitmasters, such as Roy Perez of Kreuz Market and Tim McLaughlin of Lockhart Smokehouse, occasionally add prime ribs to their smokers. And when they do, they elevate this already grand cut of meat to a whole new level.
