Herbs are a great addition to any garden. They can be used in cooking, for making teas or as natural remedies. They can be picked fresh as needed or harvested and preserved for use throughout the year.

Typically, herbs put on lots of new growth in the warmer seasons and are pruned back to size after flowering to maintain a tidy and compact form.

Unfortunately, that’s not the optimum time to harvest herb leaves for drying or freezing, as herbs tend to become somewhat bitter in flavour after flowering.
