2 x 2g gelatine sheets
300ml full cream milk
225ml thickened cream
100g (½ cup) caster sugar
½ vanilla bean, split
15g cornflour
3 egg yolks

choux pastry

40g salted butter
80g plain flour
2 eggs, lightly whisked

chantilly cream

250ml (1 cup) thickened
