She may have made her mark working under the irascible Gordon Ramsay, but internationally lauded British chef, restaurateur and global Hublot ambassador Clare Smyth seems to have picked up none of his brashness. Ever collected and cool, she sits opposite me in gleaming chef’s whites in the brisk morning light of her new restaurant Oncore. Perched on the 26th floor of Sydney’s Crown Towers, it’s the first restaurant she has opened since Core, in London’s Notting Hill, for which she earned three Michelin stars in 2021 – the first female British chef ever to do so. Smyth has had a career peppered with highlights – including catering for the Duke and Duchess of Sussex’s royal wedding –guest chef sits down for a chat before service begins.
