Trusty mince IDEAS

INDIVIDUAL SPICY BEEF NACHOS

SERVES 4 PREP AND COOK: 30 MINS

1 onion, finely chopped
500g beef mince
2 tblsps fajita seasoning
2 x 300g jars mild salsa
300g can four bean mix, drained, rinsed
175g packet original corn chips
1½ cups grated three-cheese melt
Guacamole and sour cream, to serve

1 Heat an oiled large, non-stick frying pan over a medium heat. Add the onion. Cook, stirring occasionally, until soft. Add beef. Cook over a high heat, stirring to break up mince, for about 5 minutes, or until browned. Add fajita seasoning. Cook, stirring for 1 minute.

2 Reserve ⅔ cup of the salsa in a small bowl. Add remaining salsa to mince with bean mix. Stir to combine. Bring to a boil. Remove from heat.

Divide mince mixture evenly among four ovenproof dishes (2-cup capacity). Top with corn chips. Dollop with reserved salsa. Sprinkle evenly with cheese. Place on
