I thought kale might be a flash in the pan — a trendy vegetable that we’d lose interest in after a few years.
But that hasn’t been the case. Kale rose from obscurity, became trendy and now seems to have found a permanent place in the vegie plot.
Much of the renewed interest in this leafy brassica is down to its reputation as a “superfood” packed with vitamins (including vitamin C, carotene and folacin) and rich in calcium, iron and dietary fibre.
