Dried Fava Bean Soup with Mint & Guajillo Chilli-Garlic Oil

Serves 4-6

One of the most approachable and comforting ways to use fava beans is in a simple brothy soup drizzled with a not-at-all-spicy chilli-garlic oil. Purée the soup if you’d like, or leave it chunky — the choice is yours.

• 6 cloves , thinly sliced• 1 dried , stemmed, seeded, rinsed and thinly sliced• 295ml (9.9fl oz) , divided• 225g (7.9oz) • 2 • 2 tsp , plus more to taste
