COOK ONCE, ENJOY TWICE!

DINNER

VEAL STROGANOFF

SERVES 4 PREP 20 MINS COOK 20 MINS

2 tbsp plain flour
2 tsp smoked paprika
650g veal steaks, cut into strips
75g butter
1 onion, thinly sliced
250g button mushrooms, thinly sliced
2 tbsp tomato paste
½ cup beef stock
2 tsp Worcestershire sauce
½ cup light sour cream
¼ cup chopped parsley
green beans, crusty bread, to serve

1 In a shallow dish, combine flour and paprika. Add veal strips, tossing to coat.

2 In a large frying pan, heat half the butter on high. Brown veal in 2 batches, 2-3 mins each. Set aside.

3 In same pan, heat remaining butter on high. Saute onion 2-3 mins until tender. Add mushrooms. Cook 3-4 mins until golden and softened.

4 Stir in tomato paste. Cook 1 min. Return veal to pan with stock and Worcestershire sauce. Mix in sour cream. Simmer 2-3 mins. Reserve 1 cup for lunch.

5 Scatter with parsley and serve with steamed green beans and crusty bread.
