The slope falls away below us towards a valley floor filled with scrubland and split by a dried-up stream. Beyond its far bank, a hill rises. As it climbs, it begins to leave the trees and bushes behind, gradually becoming more open towards the top. There, on the upper stretches, a frischling boar — a small immature animal — flees through the sparse vegetation. It zips around one posted shooter after another on its way up the hillside. Some 50m behind it, a Tunisian tracking dog is racing to catch up with it.
The hunt’s drive has been in progress for 30 minutes, and Jens Kjaer Knudsen and I are enjoying the spectacle from our position on the opposite side of the valley. Soon, the
