All about globe artichokes

MOST of us are familiar with the Jerusalem artichoke, that nobbly thing so difficult to peel, even if some of us dislike the flavour. The other type of artichoke, the globe artichoke, is only occasionally seen in greengrocers and is less well known in this country than it deserves, but many visitors to the Continent will have come across and developed a taste for it. It can be eaten hot or cold, and one normal-sized head – about the size of a grapefruit – will make a meal by itself.
