Use your loaf

During a busy week, preparing simple dishes in advance keeps me organised, and I can pre-track the recipe the night before. One example is the following cheese and bacon breakfast loaf. It’s generously portioned for a hearty breakfast, and also makes a great addition to a lunchbox.

CHEESE & BACON BREAKFAST LOAF

oil spray
1 large zucchini, grated
1 brown onion, finely chopped
1 red capsicum, finely chopped
150g short-cut bacon, fat trimmed, finely chopped
30g grated parmesan cheese
1 tbsp dried mixed herbs
⅓ cup chopped fresh flat-leaf
