arseillan is a pretty French town that lies halfway between Narbonne and Montpellier in the Lanquedoc region. My wife and I have just returned from a holiday there, where the attractive stone-clad harbour does not serve the Mediterranean Sea, but an inland lagoon known as the Étang de Thau. Whilst the lagoon is considered the second largest lake in France, it does in fact provide access to the Mediterranean at Sète. It has a high salinity content and is famous for its shellfish cultivation, (mainly oysters), which grow on more than 2,700 tables lined up perfectly in rows as if ready to serve lunch claim they farm the finest shellfish in the world and who am I to doubt this?
