THE best gift I received last year was the Coravin Sparkling System. I often drink one glass of champagne or another sparkling wine as an aperitif before moving on to other wines to accompany a meal. Of course, there are stoppers that will protect the bubbles for a day or so, but over the years I have become an expert at cooking with "leftover" sparkling wine and champagne. A practice that may make a dish sound more upmarket but doesn't make much difference to the final taste.
