Eighth-Size Baking Sheet

e love our half- and quarter-sheet pans, also known as baking sheets, and use them for a variety of essential tasks around the kitchen. Curious to find out if we liked pans that were even smaller, we decided to investigate the eighth-size version of our favorite rimmed baking sheet by Nordic Ware. This pan’s smaller size (about 8¾ by 5½ inches) makes it ideal for small tasks such as baking a couple cookies or scones, draining fried shallots, or letting a few seared scallops rest. We tested the Nordic Ware Naturals Eighth Sheet Pan (model 47400), using it to bake pairs of cookies and biscuits, toast nuts, and broil toast.
