PASSIONFRUIT MERINGUE CHEESECAKE
SERVES 8-10 PREP 40 MINS + CHILLING COOK 50 MINS
• 375g shortbread biscuits
• ½ cup desiccated coconut
• 150g unsalted butter, melted
FILLING
• 2 x 250g blocks cream cheese, chopped, at room temperature
• 300g sour cream
• ¾ cup caster sugar
• 2 tsp vanilla extract
• 4 egg yolks
• 1 whole egg
• ½ cup passionfruit pulp, plus extra to serve
