OKONOMIYAKI WITH CHIMICHURRI

Japanese cuisine is one of my top five favourites: it’s dynamic, colourful, intense, fresh and, most importantly, fun. I first discovered okonomiyaki at our local markets in Narrabeen, and I think it is one of the greatest pancakes in culinary history. The Japanese stall holder cooks these massive pancakes and serves them with kewpie, sriracha, sesame and chipotle mayo. This dish combines cabbage (very healthy) and every Australian’s favourite cooking device, the barbecue. Okonomiyaki can be eaten for any meal of the day, but it’s a great go-to for brunch. You can make one big pancake and cut it into pizza slices, or make little ones to serve individually. It’s very hard to overcook or undercook an okonomiyaki; this is a bulletproof recipe.
