Spaghetti and Zucchini Noodles with Tuna and Pesto

SERVES 4 PREPARATION: 20 MINUTES COOKING: 20 MINUTES

INGREDIENTS

60g dried wholemeal spaghetti
1 large (300g) head broccoli, florets chopped into 2cm pieces, stem chopped into 1cm cubes
2 tsp extra-virgin olive oil
1 onion, diced
250g Swiss brown mushrooms, wiped clean and sliced
2 garlic cloves, crushed
½ tsp dried chilli flakes
3 cups zucchini noodles
180g drained tinned tuna in spring water
60g parmesan, shaved

WALNUT BASIL PESTO

2 tbsp walnuts
1 bunch basil, leaves picked
2 cups
