Feijoa ice-cream with Anzac wafers & feijoa jam

Try your hand at making Rebecca Gibney’s sensational sweet treat!

SERVES 8 Pre-chill ice-cream machine. Preheat oven to 180°C. For the feijoa ice-cream, place 2 cups thickened cream, 1½ cups feijoas (peeled), 1 cup milk, 1 cup caster sugar, 2 tbsp vodka and 2 tsp vanilla extract into a blender and process until smooth and combined. Pour into ice-cream machine and churn according to manufacturer’s instructions. Transfer
