Winter Recipes

A Winter Warmer Mushroom Soup

1 tbsp olive oil
1 onion, finely chopped
750g chestnut mushrooms, sliced
2 garlic cloves, crushed
500ml vegetable stock
100ml milk or your favourite milk alternative
2 tbsp chopped fresh parsley

OPTIONAL Other herbs: Za’atar, or a small amount of Rosemary and Thyme

STEP 1

Heat the oil in a large saucepan over a medium-high heat. Add the onion and cook for 5 mins until starting to soften. Add the mushrooms, increase the heat to high and cook for 10 mins until tender and golden, stirring frequently.
