HILE THE HISTORICAL American epicenter of beef on bread may be the venerable Louis’ Lunch in New Haven, Connecticut (where, they claim, the first hamburgers in the country were served), many people associate steak and cheese sandwiches with the fine city of Philadelphia. The Philly version of this sandwich is, in a word, glorious (I spent a lot of time cooking and eating there).
