SHRIMP IN CHILE WATER

In the indigenous version of aguachile, which translates as “chile water”, from Sinaloa in northwestern Mexico, sun-dried game meats were marinated in water with chiltepin, a small but pungent chilli that grows wild in the hills. However, in recent decades, aguachile, now found in nearly every seafood restaurant in Mexico, refers to the modern version below, which is usually made with shrimp.
450g shrimp (prawns), peeled and deveined
9 limes, juiced
5 chiltepin* chillies
2 tbsp olive oil
3 tbsp chopped coriander
1 small cucumber, peeled and thinly sliced
½ red onion, sliced
1 avocado, peeled and sliced
Tostadas or saltine crackers, to serve
