Coconut Quinoa Curry

SERVES 2

This light and fragrant curry is a complete meal in itself with protein-packed quinoa and fresh veggies. Alternatively, serve with flatbreads, spring rolls and rice for a stunning dinner party spread.

• 1 tbsp • 1 large , peeled and sliced• 4 , peeled and finely chopped• 1 tbsp , peeled and grated• 2 , finely chopped• 3 tbsp • 400ml (13.5 fl oz) tin • 1 • 1 tbsp • 100g (3.5 oz) , washed• 1 , juice only• 2 tbsp chopped • 1 , thinly sliced
