Kibbeh

Kibbeh is a staple of Middle Eastern cuisine that, meaning football and accurately describes these football-shaped croquettes. Kibbeh is made of ground beef mixed with cracked wheat, onions and mint leaves. This mix is shaped into a ball around a filling of more meat mixed with onions, pine nuts and spices. The flavoursome kibbeh are deep-fried and then served with hummus, yoghurt-cucumber salad, labneh and pita bread.
