LAST YEAR, TREE-CHANGERS Shey Newitt and Ted Tolfree were happily running their Melbourne-based salad-bar business, Crisp, from a farm in the Macedon Ranges, Victoria, after moving out of the city six years earlier. But then COVID-19 came along and the salad bars – all located in the CBD – had to close during lockdown.
