Midweek meal
Spicy chicken & cashew traybake
SERVES 4
• Olive oil
• 8 chicken thighs (either skinless and deboned or with bones and skin on)
• 1 yellow pepper, deseeded and sliced
• 1 red pepper, deseeded and sliced
• 1 red onion, chopped
• 2 red chillies, finely chopped
• 10 cherry tomatoes, halved
• 6 garlic cloves, peeled
• 3 sweet potatoes, scrubbed and cut into wedges
• 150g chorizo, skin removed and cut into 3mm slices
• Drizzle of honey
• 150g green or black olives, pitted
• 200g cashew nuts
• Soured cream, to serve
This is one of those wonderful one-tray, bang-it-in meals. You get so much lovely flavour from chicken thighs, which don’t dry out like chicken breasts tend to do. Skip the potatoes and serve with rice or couscous instead, or shred it all up
