YOGI MISO BOWL
SERVES 2
400g brown rice, well rinsed2 tbsp sushi vinegar or rice wine vinegar1 tbsp peanut oil1 tsp sesame oil15 0g shiitake or oyster mushrooms4 tbsp white miso paste½ daikon, spiralised or grated1 small Lebanese cucumber, shaved into ribbons (use a peeler, mandolin or spiraliser)2 colourful radishes. thinly sliced50 g dried wakame, soaked in boiling water for 3-5 minutes, then drained1 tbsp kimchi2 spring onions, cut into matchsticks1 handful coriander leaves1 tsp dried dulse flakes1 sheet nori, coarsely1 handful snow pea shoots1 tbsp toasted white sesame seeds1 tbsp toasted black sesame seeds
