HAVING GROWN UP on the Eastern Seaboard, Eric Moore remembers two things about the New Jersey boardwalks: the fun-at-all-hours vibe and the famous waffle-and-ice-cream sandwiches. When a chance encounter at a bar led to an opportunity to buy a teeny-tiny ice cream shop in Maplewood, Moore thought he could re-create both and opened Boardwalk Waffles & Ice Cream. Almost five years, one food truck, and eight bill-boards later, Moore plans to manufacture his own line of ice cream. He’s also poised to open three more locations this year-on his way to 20 company-owned units-as well as 40 franchise stores. Boardwalk empire, indeed!
