BANANA-CHOCOLATE QUICK BREAD
MAKES 1 (8½X4½-INCH) LOAF
One of our favorite quick breads gets a boost of flavor from chunks of rich chocolate.
¼ cup unsalted butter, melted
¾ cup sugar
¾ cup extra-chunky peanut butter
½ cup sour cream
2 large eggs
1 teaspoon vanilla extract
1 cup coarsely mashed very ripe banana (about 3 small bananas)
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon kosher salt
1¼ cups semisweet chocolate chunks
1. Preheat oven to 350°. Spray an 8½x4½-inch loaf pan with baking spray with flour.
2. In a large bowl, beat melted butter, sugar, peanut butter, sour cream, eggs, and vanilla with a mixerat medium-high speed until well combined. Stir in banana.
3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add flour mixture to banana mixture, stirring just until moistened. Stir in chocolate chunks. Spoon batter into prepared pan.
4. Bake until a wooden pick inserted in center comes out clean, about 1 hour and 5 minutes. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack.
