SPICY RAGU WITH SWISS CHARD

■ 2 tbsp olive oil■ 1 large onion, finely chopped■ 400g/14oz minced pork/beef or■ 1 carrot, finely chopped■ 4 celery stalks, finely chopped■ 4 garlic cloves■ 2 tsp oregano■ 1 tsp harissa paste or ½ tsp chilli flakes■ A handful of coarsely-chopped flat-leaf parsley■ 1 tin tomatoes■ Salt and freshly ground pepper■ 400g/14oz pappardelle pasta■ 4 handfuls of Swiss chard
