Mina Said-Allsopp, 38, from Leeds, is the founder of the Wildcraft Bakery.
I’d always loved nature, so while studying at university in 2007, I ran foraging expeditions, teaching people about mushrooms and herbs. I’m coeliac, so I’d bake gluten-free bread and cakes for the walks, before going on to run a stall at a farmers’ market.
