Apple and Spice Wassail

Makes 6 cups

4 cups filtered 100% apple cider*
2 cups orange juice
2 cinnamon sticks
1 Honeycrisp apple, sliced
½ cup fresh or frozen cranberries
½ teaspoon apple pie spice
Garnish: apple slices, fresh cranberries

In a small Dutch oven, combine cider, orange juice, cinnamon sticks, apple slices, cranberries, and apple pie spice. Cook over medium heat until heated through, about 10 minutes (do not boil). Garnish with apple slices and cranberries, if desired.

*We used Martinelli’s Gold Medal Cider.

Gourmet Mushroom Fondue

Makes approximately 12 servings

3 tablespoons butter
2 (4-ounce) packages gourmet mushroom blend
2 shallots, thinly sliced
1 teaspoon dried thyme
Salt
Pepper
12 ounces chilled double-cream Brie*, cubed
4 ounces Gouda cheese, cubed
2 tablespoons cornstarch
1½ cups dry white wine
1 (16-ounce) loaf sourdough bread, cubed

1. In a large skillet, melt butter over medium heat. Add mushrooms, shallots, and thyme. Cook, stirring occasionally, until mushrooms are browned and shallots are tender. Lightly season with salt and pepper.
