Seasonal Breakfasts

Marbled Waffles

Makes 4

Impress your breakfast guests with these fun marbled waffles, and top with delicious, seasonal berries.

• 90g (3.1 oz) spelt flour
• 1 tsp baking powder
• Pinch cinnamon (optional)
• 1 ripe banana, mashed
• Approx. 90ml (3 fl oz) plant milk + a little extra if required
• 1 tbsp almond butter (or a different nut butter, canola oil or melted coconut oil)
• A little vanilla extract (optional)
• 1 tsp. agave syrup + a little extra to taste
• A splash of mineral water (or 1 tsp. apple cider vinegar)
• 2 tsp cocoa powder
Coconut oil to grease the waffle iron

You will also need:

• A waffle iron

1 In a mixing bowl, use a whisk to combine the flour, baking powder and cinnamon (if using).

2 Mix together the banana, plant milk, almond butter, vanilla extract and agave syrup in a mixing jug.
