Mocha self-saucing pudding
PREP + COOK TIME 1 HOUR SERVES 6
60g butter
½ cup (125ml) milk
1 teaspoon vanilla extract
1 tablespoon instant coffee
¾ cup (165g) caster sugar
1 cup (150g) self-raising flour
1 tablespoon cocoa powder, plus
1 tablespoon extra
¾ cup (165g) firmly packed brown sugar
1¾ cups (435ml) boiling water
50ml Kahlua coffee liqueur (optional)
Cream, fresh or frozen berries, to serve
