Hit the spot

Some days, you want to cook. Other days, the goal is simply “food in mouths”. So, when it comes to the end of the week, we’re all likely to have a floppy carrot hanging about, and maybe a bag of bok choy, a few straggly beans and half a broccoli head.

The following recipe is the Sir-Mix-a-Lot of wonder: you pretty much can’t go wrong. You can add bamboo shoots, water chestnuts and peanuts.

You’re looking for about five cups of chopped veges in total.

You can use cutlery to eat them, but it’s more fun to scoop the mixture into lettuce leaves or pancakes and eat with your hands.
