Peta, Countess of Darnley, gestures to the Herefordshire countryside all around her: “There are no chimney pots.” Muddy green fields and hills, hedgerows and trees lit up with all the colours of autumn, yes, but no chimney pots. “There’s no one around, and no passing trade,” she explains, “so we have to be a destination restaurant, cooking in a way that stands out on the national stage.” And, indeed, that is what they are doing.
