LENTIL HOTDOGS

INGREDIENTS
• 1 tbsp olive oil • ½ onion, finely diced • 2 garlic cloves, minced • 2 Portobello mushrooms, chopped • 100g walnuts • 1 pouch Merchant Gourmet Puy lentils • 100g sweet potato, cooked • 1 tbsp chipotle paste • ¼ tsp sweet smoked paprika • ¼ tsp dried oregano • 2 tbsp tomato purée • 1 tbsp balsamic vinegar • 5 tbsp plain flour • 25g dried breadcrumbs • ¼ tsp freshly ground black pepper • ¼ tsp sea salt To serve • Hotdog rolls • ½ onion, finely chopped • ½ green pepper, finely chopped
METHOD
1 Heat the olive oil in a frying pan over a medium heat. Sauté the onion, garlic and mushrooms until all the liquid has evaporated from the mushrooms. Once sautéed, transfer the mix from the pan to a bowl.
