Pumpkin Muffins with Cinnamon-Honey Butter
MAKES 12
1 cup all-purpose flour
½ cup whole-wheat flour
¾ cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon kosher salt
¼ teaspoon ground cloves
½ cup dried cranberries (optional)
1 tablespoon plus 1 teaspoon minced crystallized ginger, divided
1 cup canned pumpkin
2 large eggs
⅔ cup whole buttermilk
¼ cup vegetable oil
Cinnamon-Honey Butter, to serve (recipe follows)
