Gold Ribbon Tea
Mixed Berry & Thyme Scones

A medley of dried berries—including cranberries, raisins, blueberries, and cherries—pairs delightfully with the herbaceous flavor of fresh thyme in these sweet scones.
2½ cups all-purpose flour
⅓ cup plus 1 teaspoon granulated sugar, divided
1 tablespoon baking powder
1 teaspoon finely chopped fresh thyme
½ teaspoon fine sea salt
4 tablespoons cold unsalted butter, cubed
¾ cup dried mixed berries*
½ cup plus 4 tablespoons cold heavy whipping cream, divided*
1 large egg
½ teaspoon vanilla extract
• Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.
• In a large bowl, whisk together flour, ⅓ cup granulated sugar, baking powder, thyme, and salt. Using a pastry blender or 2 forks, cut butter into flour mixture until it resembles coarse crumbs. Stir in dried berries.
• In a small bowl, whisk together ½ cup plus 3 tablespoons cream, egg, and vanilla extract until combined. Add to flour mixture, stirring until a dough begins to form.
