PEA & HAM SOUP

SERVES 4 PREP 25 MINS COOK 1 HOUR 50 MINS

2 tbsp olive oil
3 onions, finely chopped
3 large carrots, peeled, finely chopped
4 celery stalks, chopped
4 garlic cloves, finely chopped
1 tbsp thyme leaves, plus sprigs to serve
2 litres chicken stock
1 cup green split peas, rinsed, drained
1 large (1.4kg) ham hock
2 cups frozen peas
cream, chargrilled sourdough, to serve

1 In a stockpot, heat oil on medium. Saute onions, carrots, celery, garlic and thyme 10 mins until tender.
