Caramelised carrot, onion and herb tart

Serves 4-6

Do you know how sweet carrots and onions get when you cook them ever so slowly? In this rustic tart I do just that. Combined with rosemary, thyme and juicy olives, it’s absolutely beautiful.

2 sheets flaky puff pastry
2 tablespoons olive oil
2 carrots, peeled and grated or ribboned
2 medium onions, thinly sliced
1 tablespoon brown sugar
3 tablespoons balsamic vinegar
2 tablespoons fresh rosemary leaves
Few sprigs thyme
3 tablespoons mustard
½ cup olives
3 pinches salt
Splash olive oil, plus extra for brushing
