MANUKA MAGIC

New Zealand beekeepers have done a fantastic job marketing manuka honey to, while methylglyoxal is formed from dihydroxyacetone in the honey, presumably due to enzymatic activity. Dihydroxyacetone has been added into clover honey in experiments, and methylglyoxal has been formed with incubation, indicating the active compound is formed in storage. Interestingly, there are more than 80 Leptospermum species in Australia (New Zealand has only one), many of which produce far more dihydroxyacetone in their nectar.
