1kg cooked king prawns, peeled and deveined (about 30), leaving heads and tails intact
Baby cos lettuce leaves, sliced avocado, mango wedges, sliced crusty baguette, lemon and lime wedges, to serve
LEMON MAYO
½ cup whole-egg mayonnaise
½ cup Greek yoghurt
1 tsp finely grated lemon rind
1 tblsp lemon juice
CHIPOTLE SALSA
½ cup drained, roasted red capsicum strips, finely chopped2 (250g) vine-ripened tomatoes, finely chopped¼ cup finely chopped fresh coriander1 tblsp olive oil1 tblsp lime juice3 tsps chipotle in adobo sauce
